Stir-fried Hsinchu Rice Noodles

Soak Hsinchu rice noodles in warm water for five minutes.

Cut the sausage into thin slices, and chopped green onion for later use.

Heat the wok, add a little oil, and stir-fry the sausages on a low heat. When the oil is out of the sausages, put the sausages up and set aside.

Heat the oil from the stir-fried sausages, drain the soaked rice noodles, and stir-fry them quickly. Mix light soy sauce and oyster sauce with a little bit of water to make a sauce, pour in and stir-fry the rice noodles, so that all the rice noodles are covered with the sauce. Continue to stir fry quickly. If the rice noodles are a bit sticky, add more oil and stir fry.

Finally, pour in the sautéed sausages, stir-fry for a minute, sprinkle with chopped green onion, and stir-fry quickly to get out of the pot.
Tips:
Soak the rice noodles in warm water for five minutes. If you like the softer taste, you can soak for three more minutes. While soaking the rice noodles, cut the sausage and chopped green onion.
I personally don't like to put too much oil in fried rice noodles. If you don't put too much oil, the fire power of fried rice noodles should be lower, otherwise it will be easy to fry and stick to the pan. If you don’t like to put sausages, you can put shredded pork or stir-fried rice noodles.
