Stir-fried Small Conch

Soak the conch with a little salt and oil for a while, and wash it repeatedly to remove dirt.

Prepare sweet noodle sauce and Huadiao wine (or cooking wine, rice wine)

Prepare green onions and ginger.

Add a little oil, green onion, ginger, dried chili and star anise to the pot.

Stir fry with conch. Stir fry throughout the whole process, don't take too long.

Add a spoonful of Huadiao wine to get rid of fishy (huadiao wine is hot, which can balance the coldness of the conch) and sweet noodle sauce (according to the amount of conch, you don’t need to add salt).
7.
Put an appropriate amount of light soy sauce and sugar, stir fry, add a little salt and chicken essence at the end.
8.
Stir fry and turn off the heat.
Tips:
Conch is cold, you should add green onion, ginger or chili, and rice wine to avoid causing diarrhea.
