This is the fairy grass! You can cook good things like fairy grass jelly! Maybe not many of them are bought in shops selling herbal medicines, not all of them are sold. I bought it in eight cities when I was in Xiamen. There was the last bit of fairy grass left at home. I was afraid that it would be broken next year. It happened to be hot these few days, so I cooked it. It's pure natural, no additives. After eating this, I never want to eat the fairy grass sold on the street again.

Wash the grass and prepare the rice soup. Immortal grass will have color in the water, and there will be color no matter how you wash it. If you want to wash it with clear water, it will be exhausted and it will not boil. Rub it a few times and wash it until there is no sand. This is very important, otherwise there will be sand in the grass jelly. Soak for half an hour after washing.
When cooking porridge, put some thick rice soup out, and add it to the cooked soup to make it easier to freeze.

Cook in a pot. I cook it in an electric rice cooker. It's convenient without looking at the fire and water. Put in more water and boil for an hour or two to produce more pulp. Some people say that it is easier to freeze before cooking. I haven't tried it because I don't have tools. But think about it, it will be easier to produce pulp.

The water is almost boiled, and take out the fairy grass.

Add the thick rice soup to the pot.

Continue to evaporate water. At this time, if the lid is covered, it will overflow the pot, so there is no need to cover it.

Use a spoon to let it cool to see if it freezes. If it doesn't freeze, continue to evaporate water. (Let it cool to freeze! Remember)

Cover the basin with gauze.

Pour in the evaporated grass soup.

Let cool and serve as celery jelly.

When eating, use a spoon to cut into small pieces, add some sugar or honey, it tastes great! In summer, put it in the refrigerator for a while and eat it to make it cooler.
Tips:
Quantity problem: Use 2.5-3 two immortals each time, add 3.5-4 liters of water, cook until 1.5 liters of soup, add 0.5 liters of rice soup, and evaporate to about 0.8 liters. They are approximate quantities.
If the rice soup is troublesome, just throw a handful of rice and cook it. Anyway, you have to filter it, it's okay!
It is possible to make soup the first time you make it, so let's continue to evaporate! If it is too hard, just heat it up, mix it with water, and freeze it.
