The buds of the chrysanthemum bloom, and the hair is buckled; fried and eaten, full of fragrant mouth; simmered and eaten, fresh. "This jingle describes a small fish produced in the Rongcheng waters of Weihai. The name is yellow crucian carp fish. The locals also call it "hairy button fish." In the early spring season when toons sprout, they will migrate to shallow waters at a depth of three to four meters, which is the best time to fish.

Every spring, looking out from the pier the size of Rongcheng City, the sea is blue, seagulls are flying, fishing boats are shuttled on the sea, and fishermen’s women are sorting fish on the shore. And what attracts foodies the most here is the yellow crucian carp-like small fish. This kind of fish is not big, with an average length of more than ten centimeters. In the words of local fishermen, "No matter how big a buckle fish is, it is only a stick long." Distance between them).

Yellow crucian carp is also known as Mao Kou, You Kou, Huang Jianzi, Wang Ji, Yellow Bird, Red Nose and Roasted Fish. Its body is flat and thin, and the back edge is slightly raised. The head is short and flat on the sides, and the eyes are small. There is no free ray on the upper part of the pectoral fin, but one ray is elongated into a filamentous shape, and the end extends to the anus. There is a small spines (spine-like scales) in front of the dorsal fin. The middle part of the kiss and head side is light yellow, the back of the body is grayish yellow or blue-green, the side of the body is silvery white, and the end of the kiss is orange. The dorsal fin, pectoral fin and caudal fin are all yellow, and the anal fin is light yellow.

Yellow crucian carp is a small mid-lower fish in warm water offshore, often forming large groups of bait, feeding on shrimps and copepods, with a life cycle of 4 years. Near-coastal migratory fishes often appear in estuaries. The Yellow Sea and Bohai Sea fishing season is from March to April and from September to October. Yellow crucian carp is one of the important edible fish in China. The meat is tender and delicious, with high nutritional value, rich in protein and fat, and contains a lot of minerals such as calcium, phosphorus and iron. Its medicinal value is also very high. It is sweet, calming and warm in nature and enters the stomach and kidneys. It has the effects of invigorating deficiency, dehumidification and diuresis, invigorating deficiency and winning, warming the stomach and eating, and invigorating the vitality.

The nets used to catch yellow crucian carp are called altar nets. Each altar net is forty to fifty meters long and is rectangular. The fishermen use boats to transport the altar net to a sea area one or two nautical miles away, and use a long stick to hold the end with the net opening and fix the net bottom. Drop the iron ingot and leave it alone on the other end. In this way, the entire net is like a flood dragon with its mouth open, swaying around in the sea with the tide, ready to welcome the fish and shrimps delivered to the door at any time. After the yellow crucian carp enters the net, the net mouth is getting smaller and smaller from the outside to the inside. The innermost net mouth is only a few centimeters thick. The yellow crucian carp is easy to get in and out.

Different fish have different habits, and their position in the sea when they swim is also different. The yellow crucian carp likes to cruise in the water about two meters from the sea surface, and the fishermen have to use a float made of foam to control the height of the net. In fact, the ancestors of fishing first used the altar to control the height of the net. When the nets are needed to descend in the sea, fill the altar with more water; when the nets are needed to rise, pour out some of the water in the altar. This kind of nets is called altar nets.

In the 1980s, there were so many yellow crucian carp in the sea that it could be described as a disaster. On average, each net could catch nearly a thousand catties of yellow crucian carp per day. At that time, the fish was very cheap and only sold for two triangles per catty, but the quantity was very large. At that time, every April, everyone could make a small fortune by catching this fish. Later, there were more and more fishing boats, and the number of yellow crucian carp became less and less.

"Selling-hairy button fish." Once upon a time, whenever the evening came, there would be traffickers chanting yellow crucian carp from small and small villages close to the sea. When the villagers heard the sound, they went out to buy a catty or two, fried them with peanuts, and served them with baba or big gratin. It was the most homely delicacy.

Living by the sea, I have eaten all kinds of fish. The freshest and most fragrant fish is still yellow crucian carp. This fish has many small spines, but it is very oily. Generally, it can only be eaten by frying, deep-frying or braising. Or if it is dried and steamed and eaten, the taste is so good that it cannot be said. Because this fish is spiny and easily hurts the throat, there is also a natural custom in the local area, that is, when eating yellow crucian carp, you can't turn your head, let alone bow your head, otherwise you will be easily stabbed.

The seawater salinity in the Rongcheng area of Weihai is relatively high, which can reach about 30%; the seawater is pure, and it is clear blue all year round. The yellow crucian carp produced naturally tastes good. "Yellow crucian carp has a characteristic, that is, it will die when it comes ashore, so it is extremely difficult to breed it, and no one currently breeds it."
