Zhijiang Duck

First prepare the ingredients. As shown in the picture, I have listed all the ingredients! You can refer to the dosage I used in the picture. The duck is a local free-range duck in Zhijiang, which is still very fresh.

First of all, you need to burn the pot with oil. Put more oil. Use the duck feet, duck heads, duck wings, duck intestines and duck innards with oil to fry them golden, then add the remaining duck meat, add dried red pepper, star anise, and cinnamon. Stir fry with bay leaves and golden brown. Add pork belly and stir fry. After frying the golden brown, add ginger garlic, rice wine, Hongjiang sweet sauce, dark soy sauce, monosodium glutamate, salt, and wood ginger oil according to your own taste. Then add appropriate amount of vine pepper oil according to taste. Hongjiang sweet sauce is specially used for fried duck in Zhijiang. Stir-fry for a while, add water to cover the duck, cover and simmer for a while.

Open the lid for about 20 minutes and add green and red peppers.

When the juice is almost finished, put in the knotted shallots and let it suffocate to give the onions a flavor.

Finally install the plate. Sprinkle with white sesame seeds.
