Cut the long eggplant in the middle and make a grid with a knife to make it easier to taste

Brush the reverse side of the eggplant with oil, preheat the oven to 180 degrees, and bake for 10 minutes

During the roasting process, seasonings can be prepared. Mince garlic, spicy millet slices (or not add)

Add Maggi umami sauce, oyster sauce, sugar, salt and oil to the bowl

Take the eggplant out of the oven and brush with seasoning

Sprinkle with chili powder, pepper powder, cumin powder, and minced garlic

Finally, sprinkle the spicy millet rings, and bake at 180 degrees for 5-10 minutes.

After roasting, sprinkle some chopped green onions or coriander.
Tips:
1. If you want the eggplant to have a dry taste, you need to brush both sides of the oil
2. The oven temperature and time are for reference only, set according to your own oven
