Angelica Yam Lamb Soup

Cut the lamb into pieces.

Ginger slices.

Put the lamb in a pot under cold water, and remove it after boiling the water.

Wash the blanched lamb with warm water to remove the foam and control the moisture.

Peel the yam and cut into hob pieces.

Put the mutton, yam, green onion, and ginger in a clay pot.

Add a spoonful of cooking wine and an appropriate amount of water to a clay pot, add red dates and angelica, and bring to a boil.

After the water is boiled, use a colander to skim any surface foam.

Turn down the heat, close the lid, and continue to cook for an hour. When the boiling time is 10 minutes, add some salt to the soup to taste.
