Apricot Jam

Wash the apricots with water, peel and remove the core, and cut into small pieces

Add 180 grams of rock sugar to the apricot and marinate (forgot to take the picture). The marinating time can be 2 hours or one night. The marinating time is long and the fruit releases pectin thoroughly, which can greatly shorten the cooking time. This is what it looks like after marinating for one night

Put the marinated apricots into a non-stick pot and boil, add lemon juice to a boil over high heat, turn to medium and low heat and stir constantly to avoid mashing the pot until it thickens for about 15 minutes. If marinated for 2 hours, the cooking time is about 40 Minutes (for reference)

Put the boiled jam into a glass bottle while it is hot and cover it, and put it in the refrigerator after it is completely cooled. ps: The glass bottle containing jam should be sterilized by boiling with water in advance and controlled to dry.

Tips:
