Bang Bang Chicken Shreds

Put the sliced ginger and pepper in the clear water, put the whole chicken in the pot under cold water and cook. The pressure cooker will take about 15 minutes, and the normal pot will cook for 30 minutes to 1 hour.

This is a cooked chicken thigh, you can also use the same amount of chicken breast.

Tear the chicken thigh or chicken breast into thin strips with your hands.

Place the chopped green onions on the torn chicken shreds.

Heat up the pot, add appropriate amount of cooking oil, add 1 tablespoon of Lao Gan Ma oil chili sauce, stir-fry for a while, add appropriate amount of salt, and stir-fry evenly.

Cut 1 cucumber into shreds. We often eat small strips of Lebanese cucumbers with thick skins. I miss the prickly cucumbers in China very much, they are fresh and tender.

Mix together the shredded chicken with green onions, the sauteed Lao Gan Ma oil chili, and the sliced cucumber. All right.
Tips:
One chicken can feed 3 meals for a family of four. 1 meal with chicken breast, 1 meal with chicken thigh, and 1 meal with chicken wings and leftover parts. Of course, I don’t want to eat the same for 3 meals. You can add chicken broth to make a shredded chicken noodle soup.
