Beef Offal Soup

Remove the beef heart, beef liver, lungs, and tripe from the fascia and wash them with salt, vinegar and alkaline water. After soaking for half a day, remove them and rinse them several times.

After removing the hairs of the beef head and feet, clean the beef bones and break them.

Put the beef offal, beef head, beef feet, and beef bones in a large boiling pot, add 6 times the water, bring to a boil over a high fire, and stew over a low fire, skimming the froth.

When the meat is simmered, remove it, remove the meat from the bones while it is hot, cut into small pieces, and put the bones in the pot to boil for 6 hours until it becomes a thick soup.

Peel the scallions, wash, chop into minced pieces, mix well with chili noodles, pepper noodles, and salt, put them in each small dish, and set aside.

When eating, first chop the minced meat, put it in a bowl, pour the hot soup, and add various seasonings according to personal taste.
