Blueberry Mirror Mousse Cake

Separate the egg white and egg yolk, put white vinegar and 30g white sugar into the egg white three times, and beat until dry foaming.

Add corn oil to the egg yolk, sift in low-gluten flour and 15ml of water, and mix well.

Take one-third of the egg whites and stir evenly.

Pour the egg yolk paste into the remaining egg whites and stir evenly.

Put it into an 8-inch movable-bottom mold and shake off large bubbles.

Preheat the oven and heat up and down at 160 degrees for 35 minutes.

After cooling the cake, unmold and divide into two pieces.

Cut it into a small circle with scissors.

Put 80g of QQ sugar in a bowl.

Add 30g of boiling water.

Ding high fire for one minute.

Stir well and let cool.

Weigh the whipped cream.

Add 10g white sugar and whip the cream at high speed.

Send it to 6~7 to distribute, there will be lines, but it can still flow.

Pour the cold QQ sugar liquid into the whipped cream in portions, and then pour the other part into the whipped cream each time.

Put a piece of cake into the bottom of the 8-inch movable bottom mold.

Pour one-half of the light cream liquid.

Arrange a few circles of blueberries.

Put it in the refrigerator for about 4 hours.

Take another 70g of QQ sugar, add 30g of boiling water, put it in a microwave oven on high heat for one minute, melt and stir well and let cool.

Pour the melted QQ sugar liquid on the surface of the cake.

Put it in the refrigerator for about 2 hours, and the mirror will be solidified. Use a hot towel to spread around a little, you can easily demould.

Place a few small blueberries and small sugar beads.

1. The QQ candy I use is blueberry flavor. You can choose the flavor according to your preference. Of course, the color of the mousse is different.
