First cook on high heat for 5 minutes, then turn to low heat for about 45 minutes (depending on the amount of time). Need to flip from time to time to avoid sticking to the bottom and burning.

Cook until the kumquat is transparent and the sugar is thick, then turn off the heat.

After cooling slightly, pick out the seeds inside and put them into a clean container. Such sugar-cured kumquats are good news for people who don't like to eat fresh kumquats. If you buy unripe kumquats that are sour and astringent, don't throw them away. Try this method. There is only sweetness and fragrance, not spicy.

The candied kumquats in this way can be stored in the refrigerator for one year in ordinary glass bottles.
Pay attention to use clean chopsticks or spoons every time.
When storing, the kumquats should be immersed in juice as much as possible. If they are exposed to the surface of the water, they will be easier to mold. If the juice is too little, pour some honey to submerge them from time to time to extend the shelf life.
Sugar is a preservative, it is not recommended to reduce it, if the amount of sugar is reduced, the shelf life will be shortened!
If you don't want to pick the seeds after they are cooked, you can remove the seeds while drawing the knife.
