Braised Ang Prickly Fish

Wash the bought fish, drain the excess water, and then coat it with a thin layer of flour

Heat the pan and add cold oil. When the oil is hot, put the fish in it. Put the fish in the pan without moving. Fry one side and then fry the other side.

Put the scallion, ginger, garlic, pepper and star anise into the pan (you can put some dried chilies if you like spicy food)

Fry until golden on both sides, add appropriate amount of hot water, add salt (according to your taste), cooking wine, rock sugar, dark soy sauce, high heat for 5 minutes, then medium heat for 5 minutes, and finally high heat to collect the juice
