Braised Big Head Sea Fish

Clean the fish and make a few strokes on the fish.

Spread the salt evenly on the fish and marinate for about an hour.

Prepare the ingredients (ginger; garlic; dried shallots).

Add oil to the hot pan and fry the fish in the pan.

Fry on both sides until slightly yellow, add all the ingredients and saute until fragrant.

Then add the prepared sauce (rice wine; soy sauce; balsamic vinegar; mix well with water), cover the pot and simmer on high heat for a few minutes, then turn to low heat and simmer.

When there is a small amount of water left, add an appropriate amount of cornstarch, continue to boil and mix well.
Tips:
1. This kind of fish is very thick, so it needs to be marinated for a period of time before being boiled.
