Put the aniseed and ginger in the pot and stir-fry the ginger. It's a bit dry.

Add the octopus, don’t turn it over, wait for two minutes, then turn it over and fry it slightly on the other side.

Add water to the octopus once, add the cooking wine, sweet and sour, soy sauce, and salt to adjust the taste for ten minutes. Then add garlic and green onions and simmer for a while and then collect the juice. (If you like spicy food, add a little less dry Chili or chili noodles)
Tips:
The octopus soup must be too much to collect the juice and reduce the soup a little. Adjust the garlic according to your own taste.
