Braised Old Duck

The old duck is chopped into pieces and cleaned.

Boil a pot under cold water and set aside.

After blanching, remove and drain the water.

Warm the oil in a pan.

Add ginger, onion, garlic, dried chili pepper and saute.

Put two kinds of Pixian Douban and homemade spicy Douban paste. Stir-fry until fragrant.

Add the duck cubes, sprinkle a few rock candy, and continue to stir fry.

Stir fry until the duck skin shrinks.
9.
Add an appropriate amount of boiling water all at once and bring to a boil.
10.
Turn to low heat, cover, and simmer for about 50 minutes.
11.
After simmering, turn off the heat, taste the saltiness and add salt as appropriate.
