Braised Pork Intestines

Roughly processed fat intestines. (In the surrounding vegetable market where the elves live, there are rough cleaned and blanched sausages for sale)

Use scissors to cut open the intestines to clean up the oil and impurities attached to the inside.

After washing, put it in a bowl, add cornstarch, high-grade liquor (above 50 degrees), and rub it with your hands for 5 minutes.

Rinse with water and drain.

In a pot under cold water, add cooking wine and green pepper to blanch the water and cook for about 30 minutes.

Blanch time, prepare side dishes.

Onions, green peppers, chives, and garlic are all processed; take out the required amount of bean paste.

After blanching the fat intestines, pick up and rinse and cut into small sections.

Pour edible oil into the wok, add garlic, and stir fry with white onions.

After the flavor comes out, add the fat intestines and stir-fry until the edges of the fat intestines are browned.

Put the bean paste.

Stir-fry the red oil, fry the sauce flavor.

Then pour the dishes along the side of the pot to further remove the fishy.

Add an appropriate amount of water.

Bring to a boil, pour in steamed fish soy sauce, stir-fry, cover the pot, and simmer over medium-to-low heat.

Simmer for about 10 minutes, open the lid when the soup is almost dry.

Add onions and green peppers.

Stir fry until the onion is broken, add salt.

Add the original flavor and seasoning.

Finally, sprinkle the chopped green onion and put it on a plate.
Tips:
1: If the fat intestines you bought have not been processed, you must first flush the intestines against the water fountain for at least two times, and then proceed to the next step of adding starch and high-quality liquor to scrub. The dirty stuff on the oil flower is the favorite, you can cut the intestines to deal with it like the elves. Don't clean up all the oil flowers, leave a little bit to taste better.
2: Starch, white wine, vinegar, salt, these seasonings are all sharp tools for treating fatty intestines. After washing them several times, there is almost no peculiar smell.
3: If you prefer something more spicy, you can pour it with red oil before it is out of the pot. The Elf’s braised sausage is not too spicy, even children can eat it.
