Stir-fried Fat Intestines with Green Peppers

There seems to be no way if you don't like this step, you still have to wash.
Add 1 tablespoon of white sugar and 1 tablespoon of salt to the fatty intestines, and constantly pinch to remove the mucus on the surface (this is the source of the fishy smell), then rinse with water and repeat twice.

Turn it over and tear off the excess fat in the very fatty intestine (don't tear off all of it, leave a thin layer, which can increase the oiliness of the fatty intestine).

Repeat the first step, add sugar and salt, rub the inside twice, and then rinse. There is no extra peculiar smell in the washed rice noodles.
▶If you feel that you still have a taste, you can do the above steps twice and wash until you can accept it.

Add the fatty intestines to the pressure cooker, add the ginger and green onions, and press the pressure cooker for 20 minutes.

Let cool after being out of the pan, and cut into small pieces. Those who want a crisp and refreshing taste can cut it thinly and set aside.
▶The fat intestines that have been pressed by the pressure cooker can be easily penetrated with chopsticks, and they no longer have the same taste as rubber bands.

Add appropriate amount of cooking oil to the wok, add cinnamon, star anise, bay leaves, and dried chili until fragrant.
▶Stir-fried fatty intestines with spices can increase the fragrance on the one hand, and on the other hand can cover the peculiar smell of the large intestine. Anyway, this dish is really fragrant when fried. If you think these spices will be an eye-catcher in the subsequent frying, you can discard them after frying, because the aroma has been soaked in the oil, so it is not a pity to lose them.

Then add green onion, ginger and garlic, and stir fry until fragrant.

Add 1 tablespoon of bean paste and sauté until fragrant.

▶The so-called even stir-frying here is really even stir-frying, because the fatty intestines are cooked, so you just need to wrap them in the seasoning.

Then add 1 spoon of cooking wine, 1 spoon of light soy sauce, appropriate amount of salt and sugar, and stir-fry evenly.
