Braised Pork Intestines
1.
Add water to the pot, add sliced ginger, star anise, chana, a little cooking wine, and boiled intestines in a pot under cold water
2.
After the water has completely boiled, boil it for a minute to remove the fatty intestines and drain them.
3.
Cut the potatoes in cold water and boil the water in a pot for about 3 minutes. The potatoes are half-cooked. The purpose of this is to blanch the potatoes to prevent them from sticking to the pot when they are stewed, and to reduce the cooking time.
4.
Chop the ginger and garlic and just cut it
5.
Cut the dried chili into sections (you can increase your taste). Put a little oil in the pot. If the oil is not too much, the fat intestine itself is big oil, and then add the bean paste to stir-fry the red oil at 60% of the oil temperature. Ginger, star anise, stir fry on medium heat (I forgot to take the picture of the fried ingredients, and I really cried stupidly by myself. The first time I posted it, I didn’t have any experience, so don’t be bothered. 555)
6.
Add the cut fat intestines, add the dark soy sauce, MSG, sugar, and salt in turn (because the bean paste is very salty, you can put less salt), stir-fry on medium heat for 2 minutes to make the fat intestines taste and taste.
7.
Put the fatty intestines in a saucepan, add water to submerge the fatty intestines, and cook for about 22 minutes
8.
Add potatoes when you feel that the fat intestines are soft and waxy (the taste varies from person to person. I like to eat soft and waxy fat intestines, so I add more potatoes to the fat intestines. If you like to eat the bitter intestines, you can use less Simmer)
9.
Finally, put the potatoes into the high heat and stew the potatoes until they are soft.
Tips:
Because the bean paste is used in the stir-frying, you must pay attention to the amount of salt. The taste of the fatty intestines is different for everyone. The editor likes to eat the soft and waxy fatty intestines, so I simmered the fatty intestines and then added the potatoes. I like to eat it. The bitter ones can be simmered less.
