Braised Wuchang Fish

1. Cut the fish back a few times, use cooking wine on both sides, spread evenly with salt, and marinate for 15 minutes.

2. Put the onion, ginger, garlic, dried chili, star anise, and dried orange peel, ready.

3. Mix water, light soy sauce, dark soy sauce, and Chinese pepper into a bowl.

4. Fry the fish on both sides with a low heat until it becomes browned.

5. Put an appropriate amount of oil, put all the ingredients in and fry until fragrant, and then add the bean paste.

6. Put the fish in, pour the seasoning mixture just now, and cook for fifteen minutes under the high heat of the fish.

7. Flip the fish halfway to taste it on the other side.

8. After fifteen minutes, the color, fragrance, and taste are all ready to cook.
