Chaoshan Oyster Baked

Wash the fresh oysters with clean water and set aside.

Add water, salt, sweet potato flour, chopped green onion, beat in the eggs and mix well, so that all the fresh oysters infiltrate the flour (do not put too many eggs, this amount will not taste greasy). Chopped green onion is more fragrant. You can also add a little fish sauce and pepper.

First heat the pot (preferably a non-stick pan) with high heat to enough heat, so as to ensure that the oysters are not sticky and crispy. Add oil (hot spot lard is more fragrant), and paste the prepared fresh oysters. Pour into the pan while stirring (divide several times), and spread the pan evenly.

Fry until the upper and lower sides are crispy and golden brown. Put on a plate, accompany with cilantro (cilantro), and serve with fish sauce and pepper.
Tips:
1. The fish sauce can also be poured directly on the fried oysters, and then sprinkled with a little pepper, but not too much to avoid too salty.
2. The fried oysters with good potato flour have more elastic taste.
3. Oysters fried with pork are more delicious.
