Cheese Soup Balls

Beat the eggs into a bowl, add ricotta cheese, flour, chopped shallots, salt and white pepper, and stir evenly with a spoon.

Take two soup spoons and use a spoon to make the cheese mixture into small olive-shaped soup balls with the same size and shape. Put them in boiling water and cook for about 5 minutes. After they are cooked, they are placed in a plate.

Put the chopped chicory on the soup balls, and drizzle with olive oil and balsamic vinegar at the end.
