Chicken Stewed with Mushrooms

Chop the chicken into small pieces, wash and drain

After the hazel mushrooms are soaked, they are kneaded by hand to wash away the impurities on the surface, and then soaked in clean water for 30 minutes.

Cut vermicelli into sections and soak in hot water for 15 minutes

After the hazel mushrooms have been soaked in water to filter out impurities, the clarified part is retained for use.

Pour the oil in the pot, first add the green onion, ginger, star anise, and chili to fry to get a fragrance, remove the chili.

Add the chicken and stir fry, stir-fry the water in the chicken, pour a tablespoon of cooking wine along the side of the pot and stir fry, then add light soy sauce, dark soy sauce and rock sugar.

After frying until it is colored, pour the water soaked in hazel mushrooms.

After the high heat is brought to a boil, add the hazel mushrooms and simmer for 30 minutes over a medium-to-low heat.

Add the soaked vermicelli, stir well and continue to simmer over medium-low heat.

About 5-10 minutes later, the vermicelli is simmered until it tastes good, adjust a little salt and sprinkle with chopped chives before serving.
