Chocolate Toffee
1.
Pour whipped cream, sugar, water syrup and cocoa powder into a small pot
2.
Turn on a small fire and heat, the sugar will melt slowly, the cocoa powder will not melt easily, don’t worry, it will gradually melt with heating
3.
Add pure dark chocolate
4.
Under constant stirring, the chocolate melted quickly
5.
After the sugar solution is boiling, you need to pay more attention to stirring to avoid muddy bottom
6.
As the cooking time increases, the sugar liquid becomes more and more viscous
7.
When it is heated for about 30 minutes, the sugar liquid becomes more viscous, and the bottom of the pot can be exposed briefly by scratching it with a spatula.
8.
Turn off the heat, and continue to stir with a spatula for a while
9.
After the sugar solution has cooled down slightly, put it into a silicone piping bag
10.
Then squeeze the sugar liquid into the prepared mold
11.
The sugar liquid that cannot fit in the mold is not very hot at this time. You can manually rub it into a strip.
12.
The sugar cubes in the mold are solidified and hardened.
13.
Manually rub the long strips of sugar, you can use a knife to cut into small pieces and eat
Tips:
1. Moisture can be replaced with maltose;
2. The chocolate used here is 66% pure black chocolate;
3. The cooking time is only a suggestion. The gas stove I use is the smallest. The softness and hardness of the cooked sugar is just right, but compared to the original flavor, the time will be a little longer;
