Coconut Fancy Bread

Prepare ingredients: If you don't have toast powder, you can change it to high-gluten flour. If you don't have yogurt, you can change it to milk or add milk powder with water. Coconut must have it.

Add yogurt, salad oil, eggs and other liquids to the bread bucket one by one, add salt and sugar to the two corners respectively, and sift into the Japanese toast flour. This flour is delicate and soft, so you don't need to replace it with high-gluten flour. Add yeast, start two kneading programs, and then start the fermentation program, a total of about 2 hours, the dough fermented very well.

While the dough is fermenting, let's make coconut fillings. Today, I used coconut oil for the filling, which is very fragrant when paired with coconut paste. No coconut oil is replaced with butter. After the coconut oil is melted in water, add sugar and stir until it is emulsified, then add egg liquid.

Adding yogurt can be replaced with fresh milk.

Stir well until emulsified state.

Stir well until it is emulsified, add the minced coconut, add the minced coconut slowly, depending on the dry and wet state, don't get too dry, otherwise it won't clump and make it difficult to handle.

Stir it to this state and let it stand for about half an hour to allow the coconut to fully absorb the liquid.

Then make a dough, plan to make 6 breads, evenly divide into 6 equal parts.

Take out the fermented dough from the bread bucket and knead it repeatedly, expel the gas, divide it into 6 noodles evenly, knead the dough, cover it with plastic wrap, and let it rest for 15 minutes.

Take a dough and roll it into a round shape, wrap it with coconut filling, pinch it firmly like a bun, and press it flat. By analogy, wrap 6 doughs.

Take a dough, roll it into a rectangle, then fold it in half horizontally, and then fold it in half lengthwise. Cut it with a scraper in the middle without cutting off the top. Turn the cut section upside down. The heart-shaped coconut bread is OK. The operation is very simple. Right.

Cover the baking tray with greased paper, and put the prepared bread into the baking tray.

Today I use an air fryer oven, select the fermentation function, put the baking tray into the oven for secondary fermentation, set the fermentation time at 38 degrees to 50 minutes, and start the switch.

After the second fermentation is over, take out the baking tray, and then select the oven function, set 165 degrees to preheat for 5 minutes, during this period, brush the fermented dough with egg liquid.

Put it in the oven at 165 degrees, and bake the middle layer for 15 minutes.

Tips:
1. The baking temperature and time of different brands of ovens are different, please set according to your own oven.
2. You don't need yogurt when making noodles. You can replace it with the same amount of purified water and add 30g milk powder. The milk is full of flavor.
3. The amount of water (milk) for different brands of flour is also different, you can reserve 10 grams of water (milk) depending on the situation.
