Light Yakult Toast
1.
Prepare the ingredients to be used and weigh them separately. Yakult has low sugar and original flavor. Choose according to your preference.
2.
Put all the ingredients except the butter into the bucket of the bread machine, put Campbell's sugar and salt diagonally, put the liquid first and then the solid, start the bread machine and knead for 20 minutes.
3.
After the dough is smooth, add softened butter and continue kneading for about 8 minutes.
4.
Cut a small piece of dough and open it with your hands. The dough is tough enough to easily pull out the mask.
5.
Take out the kneaded dough, roll it into a circle, put it in a basin and cover with plastic wrap for basic fermentation (room temperature 28 degrees).
6.
When the dough is fermented to 2.5 times the size of the original dough, just dip your fingers in flour and poke the holes without shrinking or rebounding.
7.
Take out the dough, lightly press and vent, divide it into 6 equal parts, knead it into a circle, cover it with plastic wrap and let it rest for 20 minutes.
8.
Take out the loose dough, roll it into an oval shape with a rolling pin, and pat the small bubbles on both sides of the dough.
9.
Turn the dough over, roll it up from the upper net, and roll it into a dough roll. After all the dough is rolled, cover it with plastic wrap and let it rest again for 15 minutes.
10.
Take out a proofed dough, roll it into a tongue shape with a rolling pin, and pat off the small bubbles on both sides.
11.
Turn it over and roll it down from the top, roll up the small noodle rolls, put them in a toast box in three groups, and ferment again (temperature 32 degrees, humidity 80%).
12.
When the toast box is eight-fifths full, preheat the oven, and the upper and lower pipes are 160 degrees.
13.
Cover the toast box, put it in the bottom of the oven, and bake the upper and lower tubes at 160 degrees for 32 minutes. The raw toast box I use has a short heating time, and the Sanneng toast box takes about 180 degrees and 45 minutes.
14.
After the baking is over, immediately take out the toast box and shake it upside down to release the mold, and put the toast on the cooling rack to dissipate heat.
15.
If you can't finish it, please seal it in a warm bag and store it at room temperature and eat it in time.

Tips
1. Japanese toast flour has better water absorption. If you use ordinary bread flour, it is recommended to keep 10 grams of clean water when adding ingredients. The dough is kneaded into a ball, and then decide whether to add it again. The kneaded dough is soft Moderately hard, feels like earlobes.
2. Baking time and temperature. You can adjust the time and temperature flexibly according to your own oven temperament and toast box brand. Different brands of toast boxes have different baking time and temperature.
