Coffee Truffles
1.
Filling: 44g dark chocolate, 15g whipped cream, 6g butter, 2g coffee wine
Decoration: appropriate amount of dark chocolate, appropriate amount of cocoa powder
2.
Chop the chocolate and set aside. Pour whipped cream into a bowl and heat over water. Add butter and stir well. Pour the chocolate and mix thoroughly.
3.
Add coffee wine and stir well. Take it out and adjust to a thick shape. Put it into a piping bag, squeeze out the sphere, and arrange it into regular spheres by hand.
4.
Pour the chocolate liquid all over the ball, add the cocoa powder and roll on a layer, put it in the chocolate, and wrap it with tin foil to save.
Tips:
The heating temperature of the chocolate should not be too high, about 45-50 degrees.
There is no coffee wine that can be replaced with brandy or rum, but it is not coffee truffles.
