Cold Soba Noodles with Sesame Sauce

Wash all the noodles and cut them into filaments of the same size. Among them, the shiitake mushrooms and mung bean sprouts need to be blanched to eat, and other vegetables can be eaten directly.

Prepare the noodles and cook the noodles. Put the cooked noodles in a container, then pour some oil and mix well. I put the chili oil, just pour a little and mix well, and then put it in a ventilated place. Let it cool naturally. If you are in a hurry, use an electric fan to cool it down.

Now you can adjust the hot and sour sesame sauce. Take out the appropriate amount of sesame sauce and put it in the container, then add the hoisin soy sauce, vinegar, minced garlic, chili oil, pepper oil, sesame oil, salt, sugar, and stir well. If it is too viscous, you can add an appropriate amount of water, but don't add tap water, just pour some cool white into it.

Finally, put the cold noodles in a bowl, place them on the top, and top with the sour, sweet and spicy sesame sauce.
