Colored Pigskin Jelly

1. Wash the pigskin, put it in a pot of boiling water and cook for three minutes

2. Take out the boiled pig skin and wash it. Scrape the grease off the surface with a knife. Be sure to scrape it clean, the pigskin jelly will be crystal clear~

3. Cut the shaved pigskin into filaments.

4. Put the shredded pork rind in a pot of boiling water, add lemon zest, a small spoonful of cooking wine, and cook for 5 minutes.

5. Drain the cooked pigskin with hot water, put it in cold water, and wash it several times.

6. Put cinnamon, star anise, ginger, green onion leaves, salt, sugar in a pressure cooker, and press the cooking button.

7. Dice carrots and cucumbers. Blanch the sweet corn kernels in boiling water.

8. Pour the pigskin in the electric pressure cooker into a boiling pot and bring to a boil, add corn carrots and cook for three minutes on medium heat.
