Crystal Fish Fillet

Blanch the bamboo shoots in a pot under cold water;

Leave some bottom oil in the pot, add ginger and carrot slices and stir fry;

Then add the blanched bamboo shoots and black fungus and stir fry together;

Put it on a plate and sprinkle some shallots on top.
