Boil the pigskin and cold water with the smashed ginger. Add the cooking wine and continue to cook for 10 minutes.

Seasoning: ginger slice, cinnamon, bay leaf, star anise, stewed meat bag (because the seasoning at home is not complete, I used a stewed meat bag)

Take out the boiled pigskin, let it cool, and scrape the grease inside with a knife. The aspic made in this way is transparent and clear.

Scrape the greased pigskin with warm water to remove the surface grease.

After cleaning, cut into thin strips with a knife.

Put water in the pot, put the cut pork skin strips in the pot and boil on high heat (mainly to remove the remaining fat on the pig skin again).

There is no fat on the boiled pork skin, so remove it.

.Add fresh water to the boiling pot, pour the pork skin strips into the pot, add ginger, dried chili, raw materials, cinnamon, salt and other seasonings

After the high heat is boiled, use a low heat to simmer for 1 hour.

Continue to cook for ten minutes and turn off the heat.

After the boiled pigskin soup is cool, put it in a prepared container and place the filled container on the window sill. After a few hours, it will become a very elastic aspic.

The prepared aspic is inverted, cut into large slices, and eaten with sauce

I like to chop the garlic into minced pieces, chop the green garlic sprouts into minced pieces, add light soy sauce, a little sugar, balsamic vinegar, chili oil, and sesame oil and mix thoroughly to make a dipping sauce. (You can also adjust the dipping sauce according to your own taste)

Finally, pour the adjusted dipping sauce on the cut meat skin jelly.

Tips:
Everyone has different ways to eat aspic, and the sauce can be prepared according to personal preference. Put the minced garlic and ginger in a small bowl, pour in the vinegar, soy sauce or light soy sauce, sesame oil, mix thoroughly, and pour it on the cut boiled meat jelly.
Pigskin grease must be scraped off. Repeated rinsing with warm water is also to remove grease. Otherwise, the skin will taste fishy and won't be clear.
