Curry Guilin Rice Noodles

Dice all the ingredients and set aside (potatoes are best soaked in water after they are cut).

Put potato diced, carrot diced, chicken diced, 1/2 lemon diced into a bowl, add broth (I use half of the soup boiled with boiling water), salt, and the amount of water is suitable for the freshly soaked noodles . Seal the bowl completely with plastic wrap, put it in a microwave oven and heat it with 1000w power for 4 minutes.

Add red curry powder (I used Yejia red curry powder ingredients with coconut powder in it), coconut powder (or coconut milk), fish sauce, and milk in a bowl and mix thoroughly.

Pour the prepared curry sauce into a bowl with diced chicken, add diced green pepper and diced onion, mix well, seal it with plastic wrap, put it in a microwave oven and heat it with 1000w power for 4 minutes.

Guilin rice noodles are blanched, then put on a plate and set aside.

Adjust the cornstarch juice. After the curry is heated up, add the remaining 1/2 lemon diced to a bowl, mix well, and directly put it into the microwave oven without plastic wrap and heat it with 1000w power for 30 seconds to collect the juice. Just drizzle on the rice noodles.
Tips:
This curry can actually be a single dish, and it will be more delicious if you put 7-8 sliced straw mushrooms. I haven't bought straw mushrooms recently, so I didn't put it. The time to put the straw mushrooms is the first time they are put in the microwave.
