Date Juice Melaleuca Cake
1.
The red dates are pitted and boiled together with yellow sugar and water until the red dates are soft and rotten (the ratio of red dates to water is 1:2)
2.
Wrap the cooked red dates with gauze, filter out the red date water and let cool for later use
3.
Mix cassava flour and orange flour through a sieve, add red jujube water in portions, mix and stir evenly
4.
Adjust to a fine liquid powder without particles, and then sieve the powder again
5.
I use a mousse mold, wrap it with tin foil and apply some cooking oil to prevent sticking, put it in a pot and heat it up a bit
6.
Then keep on high heat, pour the first layer of flour paddle, cover and steam for 3-4 minutes
7.
After the powder paste has condensed and the color is transparent, pour into the second layer of powder paste and continue to steam until it has condensed to a transparent state
8.
Until it is repeated to steam all the paddles, it is generally 8 layers thick.
9.
Can be stored in the refrigerator and steamed again when eating
Tips:
1. When filtering the jujube juice, don't use too much force to avoid mixing the jujube mud into the sugar water;
2. When adding sugar water to the powder, add it in multiple portions, and add the next amount after each addition;
3. After steaming, wait for it to cool completely before pouring it out, otherwise it will not form.
