Delicious Non-greasy Fried Eggplant

Wash the eggplant, shred it, and marinate for more than ten minutes.

Tips:
1. The eggplant is marinated with salt to squeeze out the excess water. A small amount of oil in the pot can make a delicious roasted eggplant.
2. Whether you need to add salt according to your personal taste, because eggplant is salted, oyster sauce, light soy sauce all contain salt, I didn't add salt to taste just right.
