Diced Pork Noodles with Eggplant

Prepare ingredients, slice green onion, ginger and garlic, dice round eggplant (cut into small dices, easy to cook), lean meat, and shred.

Put an appropriate amount of oil in the pan, heat the oil and fry the shredded pork until its color changes, and drop a few drops of vinegar (to reduce the fishy meat while keeping the shredded pork tender)

Stir-fry the shredded pork until it turns red, add the prepared onion, ginger, garlic and stir-fry for a fragrance

Add the diced eggplant and stir-fry evenly, then add an appropriate amount of soy sauce for freshness and color.

Stir-fry the diced eggplant over high heat and become soft, almost in a fast-cooking state

Add appropriate amount of water, it is advisable to have a little bit of eggplant, if you like to drink soup, you can add a little more water and bring to a boil on high heat.

After boiling, add the right amount of noodles and cook.
