Dirty Milk Tea

75 grams of tapioca starch.

45 grams of water.

40 grams of brown sugar.

Heat the brown sugar and water until it melts, and cover the pot to prevent the water from evaporating too much.

Add the tapioca starch to the boiled sugar water twice and knead it into the long section below.

Tips:
1. Be sure to use a small thick-bottomed pot to cook. My pot is a bit bigger. The cooked brown sugar pearls need to be used in ice water to make the pearl dry better and the pearls will be clearer.
2. When boiling the brown sugar water, be sure to cover the pot to avoid too much water evaporation. After the water is boiled, add the tapioca starch in two times, and then knead the dough with disposable gloves.
