Double Pepper Fish Head

Wash the fish head and set aside

Add pepper to the fish head, 4 teaspoons of cooking wine, a pinch of salt, ginger, green onions and marinate for 15 minutes

Mince ginger and garlic, chop pepper, and mince pickled wild pepper.

From the oil pan, pour in a little bit of ginger and half of the minced garlic, chop the peppers and fry for a fragrance, add chicken powder to season and serve.

Pour a little base oil in the frying pan again, add the minced ginger, minced garlic, and wild pepper to fry until fragrant.

Prepare a large deep dish. Spread ginger slices and green onions on the bottom of the dish.

Put on the fish head

Spread the fried chopped peppers on top, and bring the pickled peppers to a boil and steam for 20 minutes

Take out and sprinkle with chopped green onions

Raise the oil pan again and pour an appropriate amount of base oil and cook until it is 70% hot, and pour the hot oil evenly on the fish head.
