Egg Yolk Pork Floss Rice Bread

Prepare the ingredients first. The salted egg yolk is raw, so it can be soaked in oil or not soaked in advance. I use oil soaked.

Steam the salted egg yolk in a pot on cold water. After the water is boiled, steam for 10 minutes to turn off the heat.

Crush the steamed salted egg yolk with a spoon while it is hot, add the pork floss, mix well and set aside. If the salted egg yolk has not been soaked in oil, add a little butter or salad dressing when mixing the pork floss, otherwise the filling will be dry.

Put all the dough ingredients except butter in the basin, add water and stir well with chopsticks.

Move to the chopping board to knead the rougher gluten, add butter and continue to knead.

Knead the dough until it becomes smooth. There is no need to knead out the glove mask. You don't even need a thick mask. You don't need a chef or bread machine to knead the dough, just hand kneading. Cover the dough with plastic wrap and let it rest at room temperature for 10 minutes, 10 minutes in winter, and 5 minutes in summer.

The loosened dough is equally divided into 8 portions, and after rounding, cover with plastic wrap and continue to relax for ten minutes.

The loose dough is flattened, rolled up and down, and the bottom edge is thinned after being turned over. Put an appropriate amount of pork floss and egg yolk filling on the top of the dough.

Roll up the dough from top to bottom and place it in a baking tray. Put it in a warm place for the final fermentation. You can put the baking pan in the oven and put a bowl of hot water underneath. The fermentation time is about 80 minutes, but the summer time will be shorter.

The dough is fermented to about twice as large, and the flour is sifted and a knife is cut on the dough.

Preheat the oven in advance, and bake for 20 minutes at 180 degrees above the fire and 160 degrees below the fire.

Just bake until the surface of the bread is golden and take it out. The rice bread can be baked so well without kneading the dough.

Rice bread flour does not need to knead out the glove film to make bread, the dough can be kneaded smoothly, and it is made by one-time fermentation method, which saves time and effort. Rice bread flour is not suitable for toast, and it can be said that it is no difficulty to make various kinds of bread.
