Eggplant with Minced Meat
1.
Wash the eggplant and cut into strips without peeling. Soak it in water and add some salt so that the eggplant will not absorb too much oil.
2.
Prepare the right amount of meat filling (I bought lean meat, this one is my choice according to personal taste) + soy sauce + cooking wine + oyster sauce to marinate for 15 minutes-20 minutes (sorry I forgot to take the picture and borrow it directly from the pot ).
3.
Before making this dish, marinate the meat. Use this time to chop the minced garlic (about 5 garlic cloves for minced garlic), cut down a section of green onions, and shred them. Ginger Cut Mo (I cut it into small pieces, the fresh scent of ginger was particularly prominent when I ate it, and then I wanted to eat ginger, so I thought it would be better to cut into moo. But if you don’t like ginger, you can slice it) .
4.
Heat oil in a pan (turn the oil and spread it to the side of the pan to prevent it from sticking). When the oil is hot, put the pepper and ginger and then pour in the marinated meat froth and stir fry until the meat froth changes color. Pour in the minced garlic and stir fry (the garlic will come out at this time).
5.
After stir-frying the eggplant with garlic, pour in the drained eggplant. Stir fry (at this time it is easy to stick to the pan, pay attention to the heat and stir fry speed). Salt + light soy sauce can add some sugar to make the juice thicker (the picture is hot and hazy).
6.
Finally, add some sesame oil, add shredded green onion and stir fry twice. Turn off the heat while the remaining temperature of the fire is still warm and continue turning a few times to prepare a plate for the pan~
Tips:
Forget one thing: soak the eggplants for about ten minutes. Take them out and rinse them with pressurized water and drain them for later use. If you like spicy food, you can add some dried chili or chili sauce and minced garlic to the pot, it should be quite delicious. (Regarding the amount of ingredients, the home-cooked dishes are not so rigorously reconciled according to personal taste) Hmm! Go try it.
