Four-leaf Clover Bread
1.
1 Wash the spinach leaves, chop them into a juicer cup and add water to beat the spinach into juice without sieving.
2.
2 Put the dough materials (except the butter) into the mixing bucket and beat until the dough can be pulled out of the rough film, and then put in the softened butter and continue to beat.
3.
3 The dough can be pulled out of the film, and the first fermentation is carried out at room temperature.
4.
4 Make coconut fillings during fermentation, mix all the fillings evenly and set aside.
5.
5The dough is twice as large as it is fermented. Check the fermentation state of the dough, stick the flour with your fingers, poke holes in the dough, and just rebound slightly.
6.
6 Beat the dough with your hands to exhaust, divide into 8 portions, knead the round lid and relax the plastic wrap for 15 minutes, and divide the coconut filling into 8 portions.
7.
7Take a piece of dough, press it slightly and roll it out thinly, and put in a coconut filling.
8.
Pack 8 and close it down.
9.
9 Flatten the dough, roll it out slightly, and cut 4 symmetrical knives with scissors, without cutting in the middle.
10.
10 Cut 4 knives, a total of 8 knives, and move to the baking tray.
11.
11 Then flip up in pairs, with the cut side facing up.
12.
12 Then squeeze the sides slightly and make them in sequence.
13.
13 Put it into the oven for the second fermentation, and the dough will be doubled (no need to brush the egg liquid).
14.
14 Put it in the preheated oven at 160 degrees and bake for about 20 minutes.
15.
15 Bake them out and place them on a wire rack to cool.
Tips:
1 Each brand of flour has different water absorption capacity and different operating tools. Reserve 10 grams of spinach juice in the dough and increase or decrease as appropriate.
2 It is best to operate directly in the baking tray or put it on a small piece of greased paper.
3 If you don’t like coconut paste, you can replace it with red bean paste.
4Time and temperature are for reference only. Please pay attention to the coloring at any time. After baking for about 5 minutes, cover with tin foil, the color of the finished product is greener.
