Finally, dig a hole in the flour and put in the yeast (the yeast cannot be directly in contact with the salt, if the bread machine has a yeast box, you can put it directly into the yeast box).

Start the bread maker's kneading program, usually 10 minutes, after mixing into a smooth dough, put in the softened butter. After a kneading program ends, start another kneading program.

After the two kneading procedures are completed, the dough is smooth and elastic, and there will be some small bubbles on the surface. The requirement for the dough for the small meal bag is not as high as for the toast, and it does not have to reach the full expansion stage, so it does not matter if the glove film is not released. If you feel uneasy, you can start the kneading procedure again, the whole process of kneading for 30 minutes, do not kneading for too long, too long will affect the taste.

The dough is still placed in the bucket of the bread machine for a shot. Select the bread machine fermentation button, the whole process is 1 hour (in summer, it can be shortened to about 50 minutes). When the dough is twice as large, dip your fingers in flour and insert a hole so that the dough does not shrink or collapse.

After the fermentation is complete, start the kneading program to exhaust air, and take it out after 5 minutes. Or take the dough out and manually knead the dough to exhaust. After exhausting, divide it into 12 dough evenly, knead round, cover with plastic wrap and let it stand for 15 minutes.

Make homemade red bean paste and divide it into small round balls of 15-20g each. Of course, it’s okay to buy ready-made red bean paste.

Press the proofed dough into small round cakes, and put the red bean paste on it.

Like a bun, wrap it and round it, flatten it, and cut it into 8 equal parts with a knife (don't cut it in the middle).

Twist each corner in the same direction, the red bean paste is exposed, squashed and shaped slightly to form petals, and some black sesame seeds are sprinkled in the middle.

The oven selects the fermentation function and puts it in the middle of the oven for a second fermentation until it is twice as large (you can put a bowl of warm water in the lower layer of the oven and ferment for 40 minutes). If the oven has no fermentation function, you can put it directly into the oven and ferment in the same way, or when it is hot, it can be fermented at room temperature, usually 1-2 hours, depending on the room temperature.

After the fermentation is complete, brush the surface with egg liquid (if egg liquid is not reserved, you can brush with honey and water, the ratio of honey to water is 1:1), put it in the middle and lower layer of the oven, 180 degrees, up and down, and bake for about 18 minutes.

Bake until the surface is evenly colored, take it out, let it cool, and pack it (the bread can't be put in the refrigerator, it will dry and harden, and it must be put in a bag or sealed in a box).

Tips:
1. Different brands of flour have different water absorption properties. You can reserve some liquid in the formula and add it as appropriate when making the dough;
2. Sugar and salt are separated into the two corners of the bread bucket; at the same time, salt and yeast cannot be in direct contact, they must be separated, so the yeast should be put at the end;
3. The post-oil method is used here. Putting the butter afterwards can make the bread taste softer;
4. If the taste of the bread is not soft enough, like steamed bread, you can find the reason from the following aspects: whether the yeast is invalid (the yeast should be sealed and refrigerated after opening), use bread flour instead of ordinary high-gluten flour, and noodles And whether the two fermentations are in place;
5. I usually use the bread machine to make the noodles and the first fermentation. If there is no bread machine, it can be done manually. The same effect can be achieved, but it will be a little harder;
