Fried Crab with Ginger and Spring Onion

First, treat the crab, clean the shell of the crab with a toothbrush/small brush, peel off the triangle cover on the belly, peel off the crab shell, and remove the white gills.

Break off the crab claws, smash the crab claws with the back of a knife, and cut each crab in half twice and cut into 4 pieces for easy taste.

Prepare the ingredients, slice ginger, mince garlic, and cut green onion into small pieces.

Pour soy sauce, cooking wine, sugar, salt, cornstarch into a small bowl, mix well and set aside.

Heat up the pot with oil, add ginger and minced garlic until fragrant.

Pour in the cut crabs, turn to high heat, stir fry, add the well-mixed seasonings and stir fry evenly. Pour in a suitable amount of water, turn to medium heat, cover and simmer for 5 minutes.

After 5 minutes, add scallions and stir-fry until the juice is collected, then serve on a plate.
Tips:
1. Because flower crab is a cold food, add more ginger when making crab dishes.
2. You can add more oil to stir-fried crabs than usual.
