Fried Salt and Pepper Sardines

Sardines from the supermarket.

Thaw the sardines and wash them.
3.
Cut the thick sardines and marinate them with salt and cooking wine for half an hour.

After the oil is hot, add the sardines one by one and fry them on a low fire.
5.
Fry on low heat for 15 minutes and remove it.
6.
After the oil temperature in the pot rises, add the sardines again and re-fry them until they are golden.
7.
Put the fried sardines on the plate and sprinkle with salt and pepper.
Tips:
The second re-fry can make the sardines more crispy.
