Fried Snow Peas with Fish Belly

Remove the heads and tails of snow peas, cook them in oily brine and cool them for later use.

Cut the fish belly into strips, add salt, egg white, wood powder, and oil to marinate well and set aside. Cut other ingredients and set aside.

Heat a pot with oil, green onions, and ginger until fragrant.

Add chili and garlic to fragrant.
5.
Add fish belly, carrots, kelp, light soy sauce and continue to stir fry.
6.
Add snow peas, coriander, and chicken essence when they are out of the pan and stir well.
7.
Take out the pan and serve.
