Fried Steamed Octopus

First, remove the head and tail of the hairtail to remove the internal organs and the black membrane in the abdomen. The white material on the surface is also scraped off. After washing, cut into uniform size segments.

Wash the pepper and put it in a bowl, brew the pepper with boiling water, take the pepper water for a while; pat the green onion and ginger with a knife. These seasonings are used to marinate octopus to get rid of its fishy smell

Put the washed octopus into a large bowl, pour in the chilled pepper water, put the ginger and green onions in it, mix well, and then let it stand and marinate for about ten minutes. Pepper and green onion ginger are good products to remove fishy

Prepare the cornstarch, stir the eggs, put the hairtail section into the starch, and dip it with a thin layer of starch. Be careful not to thicken the starch here. If it gets too much, you can pick up the hairtail and gently knock it off.

Pour a small amount of oil into the pan and turn on a low heat. Then put the octopus dipped in starch into the egg mixture, put the octopus dipped in egg mixture into the pan and fry on low heat

Fry the hairtail until golden brown on both sides. It can be divided into two or three times if you can't finish it at one time

Put the fried octopus in a large bowl again, lay it out, add a little sugar and pepper, lay ginger slices, and prepare to steam

After the water in the steamer is boiled, put it into a large bowl, cover the pot and steam on high heat for 5-7 minutes.

In the process of steaming the fish, we cut some ginger, green onion and coriander.

After the hairtail is steamed, take it out and pour in the steamed fish soy sauce. Put the shredded green onion, ginger and coriander on the hairtail, boil some hot oil, and pour it over the shredded green onion, ginger and coriander. Do it step by step, there is no fishy smell of hairtail, no fishy smell can be tasted, only fresh and fragrant
Tips:
1. We seldom eat fresh hairtail that has just been fished from the sea. The white material on the surface of the hairtail will be oxidized during transportation, so it is best to remove it when eating;
2. Thin powder must be used when the hairtail is wrapped in starch;
3. When steaming fish, the water in the pot must be boiled before putting the fish, steaming it for 5-7 minutes;
4. If you buy fresh hairtail just caught, you can omit all the previous processes, just wash and cut into sections and steam it directly in the pot.
