Garlic Mussels
1.
Prepare the ingredients
2.
Pour the mussels into a basin, add a little salt and water to soak for 1~2 hours, and let them spit out the sediment in the shell
3.
Later, use a brush to remove the seaweed debris on the surface of the shells. The whiskers beside the shells can be cut off with scissors, but don't pull it hard. Not only will it not be pulled, it will cause death or damage to the mussels.
4.
Then pour the mussels into a pot of clean water, put a few slices of ginger on high heat
5.
Cook until the mussels are all open, then cook for another 30 seconds, then turn off the heat
6.
Take out the mussels one by one, pull out the feet, etc., then remove half of the shells and place them on the plate
7.
Take advantage of the time to soak the mussels to prepare the dipping sauce: wash the green onion ginger and green red pepper
8.
Peel the garlic cloves and cut into foam after washing
9.
Put the chopped green and red peppers and part of the minced garlic into a small bowl, and put the rest on another plate, as shown in the picture
10.
Then add 3 tablespoons of rice vinegar in a small bowl
11.
Then add 2 tablespoons of Yixian soy sauce, mix well, and set aside. If you don’t have Yixian, you can replace it with light soy sauce. The flavor is very delicious
12.
Pour reserved garlic and cooking oil in a small pot
13.
Boil until it is piping hot and pour into a bowl while it is hot, mix well, so that a bowl of delicious garlic dip is ready
14.
Finally, pour the garlic dipping sauce on the green scallops, hurry up and eat
Tips:
1. When cleaning shellfish, use salt and water to soak in sesame oil or edible oil for 1 to 2 hours to let them spit out the mud and sand in the shell, which is more conducive to cleaning.
2. The whiskers on the upper end of the shell can be cut off with scissors. Don't pull it hard. Not only will it not be pulled out, it will cause death or strain on the shell meat, which will affect the integrity and taste of the shell meat.
3. Don't blindly pursue the freshness and tenderness of seafood. Eating unripe seafood meat will cause harm to the body.
