Gluten-free Pancakes with Berry Mousse

Place all the ingredients of the berry mousse in a small bowl and stir until creamy. Add an appropriate amount of sweetener according to taste and put it in the refrigerator.

Put all the dry ingredients of the pancakes in a bowl and mix them with the wet ingredients. If it feels too viscous, add more flour, if it is too dry, add an appropriate amount of water.

After the dough has fermented for a few minutes, place appropriate amounts of dough into a non-stick pan and fry over a medium-low heat.
