Golden Potato Shrimp Balls
1.
The potatoes are peeled and cut into pieces and steamed in a pot. After steaming, use a spoon to press into mashed potatoes
2.
Add salt and white pepper to the pressed mashed potatoes, mix well and knead for later use
3.
Wash the shrimp, remove the head and shell, leave the tail and pick the sand line. Do not peel off the tail shell. Put in a small amount of cooking wine and salt, pinch a few times, boil the water in the pot, steam the shrimp until it changes color, turn off the fire and take it out for use.
4.
Prepare egg liquid, bread crumbs, and flour (the flour is forgotten in the picture)
5.
Take an appropriate amount of mashed potatoes, knead and press flat, add prawns to wrap
6.
The wrapped potato and shrimp are pressed tightly into a round shape and wrap the part without the shell, leaving the tail with the shell
7.
Put the prepared shrimp balls in a layer of flour, then a thick layer of egg liquid, and finally a layer of breadcrumbs. Make all the potato shrimp balls in turn.
8.
Pour oil in the pot, cook 60% of the heat, add the wrapped potato and shrimp balls, fry golden brown, and then remove
Tips:
The place where the shrimp tails are exposed must be squeezed tightly, otherwise it will easily blow up.
