Green Pepper Tomato Oxtail

Pot oxtail under cold water, ginger slices, cooking wine to remove fishy.

Bring to a boil, beat the froth, and boil for 5 minutes.

Hit the tomatoes with a cross knife, scald their skins in boiling water, and peel them.

Cut into pieces.

Cut other ingredients into pieces for later use.

Heat oil in a pot, sauté ginger slices, dried chilies, bay leaves, and cumin until fragrant.

Add tomatoes and stir fry.

After the tomatoes are sautéed, add tomato sauce, oyster sauce, light soy sauce, and rock sugar. Pour in other ingredients.

After adding water, season with appropriate amount of salt, and add oxtail. After boiling, add a handful of fresh pepper on low heat for one hour and continue to simmer for one hour.
Tips:
The longer the time, the more rotten the meat, so don't put the pepper too early.
