Hericium Pork Ribs Soup

Put the dried Hericium erinaceus in a basin with water and soak it softly (7 or 8 hours, best, soak overnight).

Chop ribs into small pieces, boil them in boiling water for 5 minutes, pour in rice wine, and cook the blood foam.

Remove the ribs, rinse them, and drain the water.

Put the dried Hericium erinaceus, the washed shiitake mushrooms, ginger slices, pepper and red dates in the casserole; add water to submerge all the ingredients, simmer on high heat for 30 minutes, then turn to medium heat and simmer for 1 hour, so that the ribs can be deboned .

Pour into a bowl and sprinkle with chopped green onion, ready to eat.
